Who doesn't love toffee sauce!
We're not claiming this sauce is healthy but it's got some great alternatives to refined sugar.
- 110g of coconut sugar
- 2 tbsp cold water
- 120ml coconut milk
- 1 pinch of salt
- 4 Dates (pitted)
- Put the coconut sugar and water in a saucepan over medium heat. Stir until the sugar has dissolved and leave to bubble for 2 minutes
- Add the dates to this mixture and let it simmer away on a low heat for a few minutes till the dates are dissolved
- Pour in the coconut milk and pinch of salt and stir well. Once mixed, pour the sauce into a jar and leave to cool and thicken slightly.
