Sometimes lunch is the hardest meal of the day for me to eat healthy. Breakfast is easy (I eat the same thing almost every day), and most of the time I have a few minutes to cook dinner. But, unless I plan ahead, lunch might be from the noodle shop down the street or delivery.
Planning ahead is best, however it can be tough to remember to set aside the time for packing a lunch, especially in the morning. One easy way to get past this is to create a routine. For example, every night when I’m cleaning up the dishes from dinner, I pack a lunch for the next day. You might also try doing this on Sunday afternoon to meal prep for a few days or maybe each morning if you have the time.
This wrap might be a solution to your lunch woes. It can be prepared in just a few minutes, and only uses 6 ingredients! It’s also small enough to be packed and could easily be eaten on the go.
I would suggest if you want to make a batch of these to keep all ingredients separate until the day you’d like to eat, as the pesto and veggies will cause the wrap to go soggy. Rather, cook up a few pieces of halloumi, roast some bell peppers, and chop arugula. Store each of these in a separate container in the refrigerator. That way you can make a wrap in no time!
Pesto Halloumi Wrap
Active Time: 5 minutes
1 wholegrain chapati or wrap
50g halloumi cheese
¼ cup sliced bell pepper and onion (can be roasted or sauteed)
1 tbsp pesto (FORM recipe)
½ tomato, thinly sliced
¼ cup rocket (arugula), roughly chopped
Heat a small nonstick skillet over medium heat. When hot, add the halloumi and cook for 2 minutes on each side. Remove from pan and set aside.
If you prefer the bell peppers and onions soft, saute or roast.
Spread the pesto down the center of the wrap. Top with cheese, peppers, onions, tomato, and rocket.
